Oregon Coast Italian Eatery Goes Mexican for a Weekend

Kaufman entertains at Guido's

(Wheeler, Oregon) - On Cinco de Mayo, the legendary north Oregon coast Italian eatery Guido’s Ristorante will become “El Guido’s,” with a host of specials for the Mexican-themed holiday.

A special nachos entrée and Mexican-styled pizzas – with Guido’s usual distinctive flair – are on tap for the weekend of May 5 – 7, starting on Friday and ending on Sunday night. Manager Phil Kaufman – called the “Mad Chef of the North Coast” because of his popular pizza experimentations – is creating a special large nachos dish of toasted chips, seasoned beef, red onions, olives, black beans, refried beans and a mix of cheddar and mozzarella cheeses. The one-time special, he says, is large enough for "two people to probably make a meal out of.”

Kaufman is offering two different takes on the usual “taco pizza” idea. One pizza is made with a sauce base of black beans and hot peppers – called the “Tex Mex.” This fiery concoction also features marinated barbecued chicken, pineapple, green peppers and red onions.

The “South of the Border” is a little more traditional (although Phil and staff have nicknamed it the “SOB” for short). This features salsa, mozzarella and cheddar cheeses, yellow onions, seasoned beef, lettuce and tomato along with toasted nacho chips.

Both pizzas come with the option of a special high-end chorizo sausage Kaufman purchased for the event, which can be substituted for any of the other meats on the Mexican-themed pizzas or any pizza on the menu.

Manager Phil Kaufman is known as the “Mad Chef of the North Coast” because of his experimental pizzas and the cult following that comes to partake in his “designer pizzas.” Customers come in, ask to be “surprised,” and Kaufman puts together intriguing, gourmet pizzas, often from high-end ingredients not on the regular menu. 675 Hwy 101, Wheeler.
